The white grapes are picked at dawn in order to preserve their potential. They are then gently pressed to conserve their freshness and complexity of their aromas and also to prevent oxydation.
Fermentation is carried out at carefully controlled temperatures using carefully selected yeasts. A proportion of the wine is kept on its fine lees to give the wine smoothness and finesse. The wines are aged partially in oak barrels.
